L'Hydropathe, the top cuvée from the brilliant Guillaume Philip at the award-winning Domaine des Diables (renowned for MiP rosé), is crafted with meticulous care. The grapes are sourced from one of the finest sites near Montagne Sainte Victoire in Provence, where the unique soil composition of clay, silt, and sand adds a mineral finesse to the wine.
Unlike its whispering counterparts, L’Hydropathe speaks volumes with its bold, intense flavours. Guillaume expertly handles the wines to preserve maximum freshness and aromatic - the outcome is the intense, delicious palate that defines L’Hydropathe.

Now in its smart new livery, the 2023 Hydropathe remains as awesome and powerful as ever. 'The Water Hater', so named after the plot of vines that rarely receive rain as they are close under the south face of the Mont Saint Victoire, this has the concentration and intensity turned up. Ramped up aromatic profile, sauvage, cherries, floral, citrus pungency. Slightly tauter in the mouth, touch withheld at present, succulent, sappy, red fruits, peach and cherries. This is excellent, and will continue to improve well into its second year in the bottle.
