Our guests trust us to deliver memorable experiences and meals on special occasions or a simple midweek lunch.
We recently had a very serious incident in one our restaurants, a guest of ours who trusted us to provide a great time, was served an allergen.
This is one incident, any like it has the potential to significantly impact on a person and their family who trusted us to deliver a simple, but hugely important request. We all know of examples in recent years in our industry where one mistake has had tragic consequences for people who were just wanting something to eat. Make sure if you're serving customers or are in the kitchen that:
👉 Guests are asked about any allergies prior to ordering
👉 The order is read back and confirmed
👉 Make sure it's the top note on the order, plus note against each course
👉 Server placing the order then communicates directly with whoever is running the kitchen
👉 Server to place red dots against the courses to highlight it
👉 The kitchen is cleaned with hot soapy water in any areas which may be contaminated with the allergen, including hands - sanitiser will not remove the allergen
👉 Allergy free food is served first and taken separately to the table
👉 Do not forget to include desserts, sides, cocktails or any order placed subsequently
