Mushroom Farming in New England

So many of you have asked about our farm, we thought we would give you a peak behind the scenes.

Here in New England, mushroom farms are growing mushrooms that grow on cellulose (sawdust) in the light, including Shiitake, Oyster, Lions Mane, Chestnuts, and a few others. It is worth noting that Oyster, Lions Mane, and Chestnuts all grow in the wild in our woods, which makes them ideal candidates for production. 

You are likely more familiar with Bisporus Agaricus mushrooms, the latin name for white button, cremini, and portobello mushrooms. These all grow on composted animal manure in the dark. US production of these mushrooms has been consolidated and concentrated in Pennsylvania.

Our mushrooms grow rapidly and must be harvested daily for maximum quality and shelf life. While harvesting hundreds of pounds of shiitake mushrooms might seem like a tedious task, our crew is bonded by the ability to slip into 'the shiitake zone.' Yes, shiitake harvesting becomes meditation!

Mushrooms release billions of spores into the air so our crew wears masks when working in the grow room to protect our health. We also keep ventilation running 24/7 both to provide fresh air to the mushrooms as well as keeping the air clean for our crew. Check out our youtube video of a shiitake spore release

It's a beautiful sight to walk into a grow room that is hovering at 95% humidity and find these racks loaded with oyster mushrooms that are ready to harvest. We grow in large batches - starting hundreds of grow blocks at a time - so our harvest time is more efficient. Our typical weekend harvest of oyster mushrooms is over 400#!

Chestnuts mushrooms, a day before harvest

One frequently asked question is how long it takes to grow a mushroom. The first step, inoculation and incubation, takes 7 - 90 days, depending on the species of mushroom. After incubation, once the mycelium has fully colonized the sawdust, we move the grow blocks into the grow room. The grow room temperature is kept between 60 and 65 degrees and the humidity level is around 90%. Some species, such as Shiitake & Oyster, will fruit in a week or so. Other species, such as these beautiful chestnuts are a little more fussy. These chestnuts require being spritzed with water 2 - 3x/day and take about 21 days to grow.
