Located in the department of Quindio, close to Pijao, Jardines del Eden stands as a testament to Felipe's dedication to innovation in coffee cultivation. The farm, one of the highest in its region, serves as a hub for experimenting with new processing methods and cultivating exotic varieties like Gesha, Sudan Rume, SL-28, Wush Wush, and Laurina. The coffee processing at Jardines del Eden is meticulous and innovative. For this particular lot, the ripest Castillo cherries undergo a 24-hour dry anaerobic fermentation in ceramic tanks, followed by a 60-hour fermentation in GrainPro bags within water tanks maintained at a consistent 22°C for 72 hours, and then a 72-hour freeze period. The final step is a 14-day drying phase on raised beds, ensuring a unique and high-quality coffee experience.
The flavor profile of this coffee is marked by a robust intensity, characterized by deep chocolate notes reminiscent of high-percentage dark chocolate and the distinct taste of cacao nibs. Alongside these rich chocolate tones, there is an enveloping sweetness, akin to panela and honey, adding layers of complexity to the palate. This coffee's profile makes it particularly exceptional when used as a base in milk-based beverages. Its intrinsic richness and sweetness harmoniously complement the creamy and sweet characteristics of steamed milk, creating a balanced and indulgent experience.
