PULLUS HALOZAN WHITE WINE
Stajerska, Slovenia | Minimal Intervention
Slovenia has been described as one of the most exciting "new" wine regions of the old world. In many European wine regions, strict laws determine what grapes can be used, but that isn't the case in Slovenia, where experimentation is encouraged. Halozan is a blend of so many white grapes, it's hard to remember them all. Some you may know (Sauvignon Blanc, Pinot Grigio, Chardonnay, Reisling, Muscat) and some you may not (Welschriesling, Furmint). Sauvignon Blanc's crisp minerality shines in this wine, along with juicy tropical fruits, citrus and floral notes.

CHATEAU DU CAYROU
Cahors, France | Organic, No Oak
This is a Malbec that defies the style and flavor profile made famous in Argentina. Although this uber-popular grape is a household name thanks to Argentina, it still has a foothold in southwest France where it originated. Malbec from Argentina tends to be rich and bold, with dense fruit and soft tannins. This French Malbec, however, offers soft notes of plum, earth, and smoke on the palate, finishing deep and silky, yet light on its feet.

MULLINEUX KLOOF STREET ROUGE
Swartland, South Africa | Sustainable
Although South Africa's signature wines are Pinotage and Chenin Blanc, the Swartland region has made Syrah one of its dominant grapes. Mullineux & Leeu Family Wines produces some of the region's most acclaimed Syrah blends, and Kloof Street Swartland Rouge is one of them. This wine is all about freshness, balance, and drinkability, blending 69% Syrah with 15% Tinta Barocca (a grape originating from Portugal's Duoro Valley), 11% Grenache, and small percentages of Cinsault and Carignan. This is a fuller bodied wine with a perfumed nose of violets, spice, and purple fruit, richly textured with firm but approachable tannins and a fresh, lingering finish.

MAS DES CAPITELLES "VIELLES VIGNES"

While you may be familiar with Southern France’s vast Languedoc-Roussillon region, you might not have tasted the fresh, savory wines of Faugères, a small wine region tucked in the Languedoc’s rugged hills. They are muscular reds, with notes that recall the local wild scrubland called garrigue—home to wild thyme, sage, rosemary, garlic, and fennel. This Faugères from Mas des Capitelles winery is built on the backs of Mourvèdre (50%) and Carignan (25%) from vines up to 80 years old, with Syrah (25%) completing the blend. An exuberant nose of blueberries, violets, and warm dust evokes the sun-scorched slopes of the appellation. The palate sizzles with an almost spiky minerality, framed by rich but firm blue and black fruits.

This is not your typical Cava, and not just because it's pink. It's got fun written all over it. A blend of Spanish Garnacha and Monastrell grapes, it's fruity and uplifting, the kind of wine that brightens your day. It's bone-dry, super-refreshing, full of strawberry and citrus notes. This all-natural wine (with zero dosage or sugar addition, indigenous yeasts for fermentation, and organic fruit) takes its name from nature. In Catalan, Azimut means the line on the horizon between the sun and the sea. A fun way to start the evening with nuts, olives or Manchego cheese, or pair with paella or risotto.
